Healthy Almond Flour Pancakes in 10 mins

These easy healthy almond flour pancakes are light, fluffy, and they're made with just a few ingredients. Low-carb pancake recipe that uses almond flour instead of whole flour pancakes. Perfect for healthy breakfast and healthy snacks.

Ingredients
  

  • 2 Eggs
  • 1 cup Almond Flour
  • 2 tbsp Maple Syrup
  • 1 tsp Baking Powder
  • 1 tbsp Olive Oil
  • 1/4 tsp Seasalt
  • 1 tsp Vanilla Extract

Instructions
 

  • To make the batter, combine all of the ingredients in a large mixing bowl and whisk intensely. The batter should be runnier than regular pancake batter.
  • Cook for 2 minutes on either side and flip until the tops become dry and bubbles emerge – peek underneath for pleasant colour. Pancakes will burn if this is not done.
  • A dash of cinnamon and pure vanilla extract would go well as always.
  • Add banana, strawberries, blueberries, or blackberries on topple as topping with some little bit extra maple syrup if desired.
